Our Story

Enso’s journey began in 2007 when our founder traveled to Japan seeking the world’s sharpest kitchen knives. After meeting with generations-old knife makers in Seki City, Japan’s famous cutlery capital, he discovered an industry clinging to tradition in a rapidly changing world. Enso was born to preserve Japanese bladesmithing techniques by fusing them with modern technology and design.

We launched our first knife collection in 2009 with a simple mission: create the world’s finest kitchen knives and make them accessible to more people. Our early innovations like hammering blades by hand brought authentic Japanese knife-making craft into western kitchens. As we grew, we pioneered new techniques like etching our logo to minimize surface drag when cutting. We introduced new alloys and blade geometries to optimize edge retention and cutting performance.

Our Knives

At the heart of every Enso knife is a high-carbon stainless steel blade forged in Seki City, Japan. Our forging process works the steel to enhance its strength and flexibility. We then sharpen each blade to a precise 15° angle, etch our logo via electrical discharge machining for minimal drag, and hand-hammer the blade. The result is a knife that achieves an incredibly sharp and durable edge while being corrosion and rust resistant.

Our HD Series showcases centuries-old hand-hammering techniques (Tsuchime in Japanese) combined with modern innovations. Hand-hammering bashes the blade over 13,000 times to create tiny dimples along the blade road. This reduces drag when cutting and prevents food like potatoes and apples from sticking to the blade. It also creates a striking Damascus pattern. HD Series knives achieve a Rockwell hardness of 60-61 for excellent edge retention.

Our SG2 Series takes knife-making even further by layering 101 sheets of stainless steel and forge welding them together. This creates a beautiful Damascus pattern with over 200 layers visible on each side. SG2 steel achieves an extreme 64 Rockwell hardness for superior edge retention. With advanced cryogenic processing, corrosion resistance and flexibility are enhanced. The 101-layer construction also reduces drag when cutting.

Both Series offer a refined balance of cutting performance, edge retention, corrosion resistance and agile handling. Enso knives have a comfortable western-style handle that provides secure grip even when wet. Made of moisture resistant pakkawood and resin, the ergonomic handles come in right and left-handed designs.

Craftsmanship

From design to sharpening, every step in creating an Enso knife focuses on perfecting the details that matter most to performance and longevity.

Design

Enso knives begin as a sketch exploring blade shape, length, weight distribution and handle contour. We make gradual refinements over months until the ideal design emerges. Great care is taken to ensure the right balance of control, agility and comfort so the knife feels like an extension of your hand.

An Enso knife must excel at versatile tasks like mincing shallots or slicing tomatoes before proceeding to production. Extensive testing ensures even the smallest details – from blade curve to handle ergonomics – are perfected.

Forging

Forged in Seki City, the historical heart of Japanese bladesmithing, each Enso knife starts with premium Japanese steel. Our skilled forging masters shape the heated steel into the desired blade form with precise hammer strikes. This enhances the steel’s strength and flexibility to take and hold a remarkably sharp edge.

We forge high-carbon steel including VG10 and SG2 that achieves an optimal balance of edge retention, durability and corrosion resistance. Multiple rounds of heating and hammering refine the shape, thickness and geometry until an exceptionally sharp, durable blade emerges.

Sharpening

A razor-sharp and durable edge is the soul of an exceptional knife. Enso knives are sharpened to a precise 15° angle on both sides using a three-step process. First, we use traditional water stones to establish an initial sharp edge. We then hone this edge using diamond abrasives to refine the apex of the edge. Finally, we polish the edge using an ultra-fine grit whetstone. The result is an incredibly sharp and durable edge ready for years of peak performance.

Hand-Hammering

In our HD Series, we hand-hammer each blade over 13,000 times using techniques descending from centuries-old Samurai sword making. This produces the signature tsuchime (hammered) finish while further enhancing the blade’s strength. Hand-hammering requires tremendous skill to evenly hammer the blade without deforming it. This ancient technique remains crucial to achieving our optimal blend of cutting performance and beauty.

Etching

Traditional Japanese knives feature a thick Kasumi finish along the blade road to reduce drag when cutting. While beautiful, large Kasumi layers add weight and material to the blade.

Enso knives pioneer a modern alternative: electrical discharge machining to etch an ultra-thin logo precisely along the blade road. This minimizes drag during cutting and peeled products like potatoes or apples sticking without adding material. The razor-thin logo maintains the blade’s ideal weight balance while creating a striking visual identity.

Handle

Enso’s ergonomic handles provide hours of fatigue-free grip. We use moisture resistant pakkawood that has a comfortable texture and remains grippy even when wet. The contoured resin bolster provides a smooth transition from handle to blade. To ensure the proper fit for your individual hand, most Enso handles come in right and left-handed designs.
